Nine jars of homemade kimchi went into the fermentation queue recently, after a full afternoon of cabbage, gochugaru, and a countertop that looked like a Korean market exploded. Six days later, it was judgment day.

Cracking the First Jar

Popped the lid on the first jar and the smell alone told me this batch worked — sharp, funky, alive. That's the smell you're chasing with fermentation: not "spoiled," but transformed.

The Verdict

Perfect tang, right on time. This is exactly the flavor profile I was chasing when I built the paste — the fish sauce and tamari doing their umami work, the pomegranate molasses rounding things out with a little sweetness against the sour, and the fermentation itself landing right where it needed to.

And the heat? Right in the pocket. That heavy hand of gochugaru paid off — bold and present without tipping into "can't taste anything else" territory.
